Question about some options in Soft Encode

I'm tweaking around with Sonic Foundry's Soft Encode, and I'm wondering about two options in the encoding properties, Dialog normalisation and Audio production information.

Which values should be used?

look around on dolby's site. They have some interesting PDF files, that go into the details. One is the "Dolby Digital Encoder Quick Start Guide" and the other is the "Dolby Digital Professional Encoding Guidelines".
