Though I love making the ASCII art, its getting a bit tedious OCRing everything I rip. Does anyone know how I could go about taking several subtitle streams from a VOB and storing them as graphics inside any of the video containers?

rip your vobs with vobsub.
this will result in a idx.
Then mux your idx with mkvmerge

TomSem got that right
Though you need to mux the .sub as well as the .idx. Matroska supports vobsub, as for ogm, I'm afraid you're screwed :)

Thank you! ^_^

Who would've thought MKVs would be more flexible than OGMs?
It all worked, but I got a bit scared putting a vorbis into a MKV for the first time -.-'

That works fine. MKV is more flexible than ogm for quite a while now...
