@Millenium Falcon (I always wanted one of those, but Santa Clues never brought me one :( )
In Full Disk mode you will see DVD structure and folders that say menus, main movie, extras and unreferenced material. Under that you will see stop and play button with a black area. just expand one of those folders and highlight a title and press the play to preview it.(Note: when you are previewing something you can right click the playing title and pick which audio you want to here as well.)
In Re-Author mode all your titles are under the tab that says DVD Browser. Highlight and preview as well.
For cutting out credits you can only do this in Re-Author mode and your menus will not work. Check out ddlooping link DVDShrink.info (http://www.dvdshrink.info/) for guides. But you can use DVD stripper to cut out the credits then run it through dvdshrink if you want to keep the structure.
