I am converting my BluRay collection to digital files for Plex. I usually rip the PGS subtitles as a SUP file, and then proceed to OCR and convert that to an SRT. The tool I use to go from SUP to SRT is SUBtools beta, however that hasn't been updated in a few years and is still on Tesseract 3. I emailed the dev but never got a response back. I've been looking everywhere for a more recent app that reduces OCR errors with the latest Tesseract but I can't find anything for Mac. Any suggestions?

Don't waste your time with the OCR tools.
Keep the original SUP format.

Keeping them as SUP files forces Plex to re-encode on the fly and burn-in the subs for your stream. Not all devices natively support image based subs. Not a major issue when watching on the local intranet, but major problems pop up when trying to stream remotely depending on the device.
