How do I train SupRip to recognize 1. Italics and 2. special characters such as a "note'' to indicate music?
If I make a mistake, can I make SupRip "unlearn it"

Well... when it highlights an Italic character and asks you what character it is (e.g. : " a "), simply type "a" into the textbox and mark the "italic" checkbox on the right of the dialog window :)
If you make a mistake: you go to the second menu, select "Edit character matrix" and there you can find all the characters that you did teach to SubRip (at least, in the current session, or for the current matrix, to be more precise). You can modify or delete any of them :)

Hold on there my friends. I think you are speaking of two different programs.
Suprip is the HD subtitle ripper. As of yet, I don't think it learns characters quite yet. Maybe the author can clarify.
Subrip is the SD subtitle ripper that almost everyone uses. It does learn. But getting it to read HD subtitles is a difficult process (that I know of).
I believe the original poster was speaking of Suprip. The HD subtitle ripper, which does not "learn" quite yet.
