I was planning on capturing some movies from laser disk. I was going to use an All In Wonder card, capture into Adobe Premiere to AVI then encode to MPEG2 with TMPG. Does this sound right? This is what I do to capture from my DV camera

Capturing from DV is in fact only a digital transfer of video-data from your camcorder to your PC. An analogue capture from laserdisc is a whole different matter. You'd be advised to carefully study those capturing guides and FAQs that are available on this and other sites.

How is it any different from capturing from VHS or HI8? You still just capture to Premiere and save the AVI then encode the AVI. Is something magical about capturing from Laser Disk?

You didn't mention neither VHS nor Hi8 in your previous post. You said DV which is something completely different. If you know how to capture from VHS or Hi8, well, then you're just fine.
