Any tool or guide for encoding Apple Vision Pro-compatible MV-HEVC using x265?

No, as x265 doesn't have official support for MV-HEVC at this time.

I successfully made some MV-HEVC content using Apple's tools on the M-series Macs, which was quite fast and good quality. x265 may be able to reduce bitrates some beyond those tools, at the cost of slower encoding.
