2 => 1 DVD question.

I've been using this forum for a long time now and have found MANY useful answers here - so first I must thank the good members here !!!
(Finally, after all this time I've joined and waited the mandatory 5 days to ask my question.)

Background:
I use 4.7GB media & PC s/w to back up my bought DVDs - usually with very little problems.
I don't use DVD9 media or blu-ray and don't want to use them either.

What I'm asking about:
I have the 3-DVD set of Avatar.
I only watch the longest version which is just ~1/3 of each of the 1st 2 DVDs.
I really hate the deal with swapping the DVDs !!!
I know how to back up JUST the longest program to 2 separate DVDs, but that STILL means I do the hateful swapping thing.

The question:
If I have made 2 DVDs with 1/2 the movie on each, including english subs & only the 2 channel audio - how can I squish that into a SINGLE 4.7GB DVD to watch straight through ?

I don't need the best quality, so that is not part of my question; and as I said already - I want to use the media I always use and not DVD9 or whatever to do this.

If anyone has done this or something like this - please share how you've done it with me ?!?!?!

Thanks !!!
