Matroska Files

What is the deal with these? I have used AVC and every combination of video and audio codec and setting to keep the audio and video synced. Is there a trick or one good combo?

I don't understand - are you having trouble playing these files and having the audio and video in synch, or are you re-encoding some and the resulting file is out of synch?
