DIY seamless branching (?)

Hi guys, I am looking for a way to play a movie from disc (!!) in a certain way.
For example. Stanley Kubrick's THE SHINING was released here in Germany on UHD only in the US cut which is longer than the European cut. However, these cuts makes the movie overall much more ambigious and I actually do prefer the EU-cut.

So is there a way to kinda 'cut' a movie on-the-fly ?
I remember reading about CUE-files but I did not looked into that.

Any hints/suggestions/tutorials are much appreciated. Thanks

I would make a multi-Edition-mkv with my chapterEditor of the disc.
With an mkv you have the possibility to generate a virtual timeline of the content you want to watch.

And for a BD-R you may split the .m2ts where you need it, then use BDEdit to generate Clipinf and Playlist files maybe following a multiversion example.
Ratatoulle comes up in my mind. You may take an example of a disc you already own.
