One-click DVD Encode-and-Author suites overview

A variety of popular suites exist for one-click conversion of video from sources other than DVD (eg AVI) to a set of authored DVD files or a DVD image file. A selection of these is detailed below.

Freeware:

DVD Flick - Open source solution for creating DVD's with menus from a variety of file and compression formats based on ffmpeg.

DeVeDe - Open source, cross-platform solution for creating DVD's with menus from a variety of file and compression formats based on mencoder.

FAVC - Freeware suite for creating DVD's with menus which, whilst the sources are available, uses a variety of included open and closed-source programs for the various tasks. However, its use of Aften for audio and HC or QuEnc for video encoding offer excellent quality. Uses the popular MuxMan authoring engine and ImgBurn for writing.

AVI2DVD (TrustFM) - Freeware suite to encode DVD content from AVI/OGM/MKV files. Offers choice of encoders including both free (QuEnc, FreeEnc, HC) and commercial (CCE) encoders.

AVS2DVD - Open source DVD creation suite with simple DVD Menus creation, again using various robust freeware projects (eg AviSynth, QuEnc, HCenc, FFMpeg, MuxMan, Imgburn) for the various tasks. AviSynth users will appreciate to tweak/edit the AVS script.

DVD2SVCD - an old-time forum favourite. Closed source freeware, no longer under development and does not include a video encoder. Accepts DVD, AVI or PVA sources but does not support menu creation. A variety of resources regarding supported encoders (free and commercial), plugins and FAQ are detailed below:
Non-free software:

ConvertXtoDVD - Versatile proprietary suite to convert most common formats to DVD

Nero - needs no introduction. Popular proprietary burning software offering facility to convert video from other formats and burn to DVD.

This list is far from exhaustive and is derived from posts seen in the forum over a number of years. If any other suites gain similar popularity here, they may be added but please do not make requests to the moderation team to have your software included.
