I will suggest that you add Handbrake to your apps collection it's even available for Mac OS
get it here:
Free software the best thing happend.
Debian and a system update is as simple as
apt-get update && apt-get upgrade

They are scripts that use some of the utilities you mentioned before, but they simplified our lifes a lot.

Injecting some love in the outdated linux topic

VobSub2SRT: command line OCR converting idx/sub subtitles into srt

Gaupol: text based subtitles editor

MakeMKV: DVD/BD decrypting and transcoding

HandBrake: well known video encoder

MKVToolNix: mkv tools (info, merge, extract)

libdvdcss: library for accessing encrypted DVDs

what do you need more? ooh yes... Debian of course please add these in the first post as too many apps are outdated in that one

and sView, a rather good 3D (image+video) player I discovered recently.

Can show almost anything "as" anything even 3D MVC MKVs. Output (for example) as anaglyph (all 3 versions) or SBS for those who can do parallel view like me.

Available for Linux, Windows, macOS, Android. The Windows version shows an upside-down user interface here, but on Linux it runs just fine. Also has an Ubuntu PPA and a Github page.
