Matroska - Cut, Trim, Split

I have just realised I don't know and can't find the answer to a simple problem. After I have converted my files to matroska, how can I cut, trim or split these mkv files ?

What is the best way or program to use to trim mkv files?

littleD you were referring to mkvtoolnix with your link? I already have that but couldn't instantly figure it out so searched for other options. Will have to give it another go and try a little harder to find the cut and trim options this time.
