You are right with the wikipedia:

DAR = Display Aspect Ratio
PAR = Pixel Aspect Ratio
SAR = Storage Aspect Ratio

But here 'sar' is used like Sample Aspect Ratio, the previous wikipedia PAR Pixel_aspect_ratio

Then really we can change the wikipedia PAR using the x264 parameter --sar
