I was wondering if it is possible to configure a PC to wirelessly send game video, audio to a composite in on a display in another room. Similar use wireless joysticks.

Well, you could use a video thrower for a standard TV and play your game off that. I've got one here, works on 2.4 Ghz and transmits a/v. Not awesome quality, but not half bad either. You might have problems with high bitrate games also.

I don't remember the amounts exactly, but check wikipedia for the amount of data transferred over your happy VGA/DVI connector, and then realize that all that data would now have to be sent over a wireless link, plus overhead for encryption, distance from the router/AP, etc.
