Just did Steamboy R1 and used PgcEdit's "Jump to PGC upon DVD insert (http://www.videohelp.com/~r0lZ/pgcedit/third_party/blutach/How_to_use_PgcEdit_new_macro.htm)" macro. This is a great DVD to use the macro with because it took a long time to get to the main menus with trailers playing prior to.
The only thing I removed was all my trailers and 3 audios: Japanese, Espaņol, Portugeuse, and French. I kept English 5.1. The whole DVD was still to big for me to use DVD Shrink so I went and used DVD Rebuilder.
At the end, I did a playback test and found that there was no sound in my movie and also I was getting English subtitles displaying. I had a hunch that my Japanese audio was the default one and that being a R1 version, the English subs would accompany it too. I was right.
Here's what I did to get my DVD working with English audio and no subs by default. But before I begin, I'd like to say that there were 3 sets of Language menus for this DVD: English, Spanish, and French. They were accesed by your DVD Player's language preference. I chose to option at the end to insert my new commands into all sets. With that said, here's the fix
Starting with the English menus, open up your post DVD files, after doing "Jump to PGC upon DVD insert" macro, and select VTSM 3 , LU 1 (en) , 4

In its Pre Commands, you should have a SetSTN command in #16. Double click on this to get command editor

Just to let you know...
Audio 0: Japanese
Audio 1: English
Audio 2: French
Audio 3: Portuguese
Audio 4: Espaņol

I wanted English because that was the only audio I kept. As you can see above, the default audio is set to Japanese (Audio 0). Click in slide bar and change it to 1, which is English. If you had kept other audios, you can change it if you want. That takes of the audio part.

As for the English subs not displaying, uncheck "on".

Click OK to set.
Now, your new command is set as below.

As for the other kept menus, Espaņol and Portuguese, just repeat the process above with them too.
Save the DVD and test.
Note 1: Since I only wanted to keep this backup at English language, I could've have removed my Espaņol and Portuguese menus with PgcEdit and just deal with editing the English menus but after using DVD Rebuilder, the video quality turned out pretty good.
Note 2: You can also set the default audio and sub by furthering your trace by accessing the language setup menu and going back to your main menu to complete the jump but you will lose your menu intro though. I preferred to keep it.
