Enable Standalone support??

Question, if I enable Stand Alone Support and select ESS does that mean the result will not play in non ESS players?

I have an avayon player and I was wondering what setting I should use. I believe it has the ESS chip set in it.

No, that means if you don't select it you won't be able to play resulting video on ESS players. Atm ESS compatibility is the most "compatible" one, i.e. it should be ok for all devices.
