Does the Demux function in DGIndex "take care" of any audio delay that may be present?

no, but it tells you what the delay is so you can correct it on your own, set it again when muxing, or adjust the stream when encoding it.

Search for Delaycut and AC3 Delay Corrector -- AC3 Delay Corrector is very simple to use and straightforward.

The only audio streams that are output with zero delay are LPCM demuxed as WAV. All others will have the delay included in the filename of the demuxed audio.
