The only way I know is demuxing. You can do it with VobEdit or ripping with DVD Decrypter using Stream Processing Mode.
Then you can use IfoEdit to remux the audio file/s you want.
Greetings! ;)
Edit: But this is more an authoring or newbie question... don't you think?

Use muxman to remux. It's way out in front.
Remember to change your menus. B*tch of a job.

No guys, you dont understand what I mean!
Personally, for replace or add new audio or subtitles, I use Program-combination:
for Demux is DVDDecryter, for remux is Ifoedit and finally is VOBblanker. All this combination-prgram work for me just fine, no problem but nevertheless its take to much time.:(
I looking for the universal program, which can do this job, i.e.
if you whant to replace or add some new audio from original DVD-files,
just open progaram, select original audio and command replace/add original audio with new one!;)
thanks

Well... I think a program who could replace audio files automatically from a DVD, would do exactly what the other tools do... demuxing. And I think is gonna take a long time as well.
Anyway, the way you do that it's just fine... I don't know any program who can do all those things automatically.
Greetings! ;)

Further go to "Output", point where we whana save and press "Begin Output". By warning that disc is more that 4.7GB press "خت".
