The current beta of autoGK will take .vob files (in file mode) and create an avi. However, 'step 2' where the audio stream is selected only lists the audio streams in a non-descript fashion. Is there a way to know which stream represents which track, i.e., DD5.1, Stereo,French, Spanish,etc.?

That info is not present in vobs, only in IFO/stream info file. Its only getting parsed in DVD mode.
