I used to rip DVD's using DVD Decrypter with Stream Processing activated in order to convert with GKnot(giving me one VTS.IFO and few VTS.VOB files).
Now that I bought a DVD-R, I'd like to know if there any guide and software that can put the DVD together again using these .ifo & .vob files.
Could anybody help me with this point?

No, you will have to go back to your source DVD. GKnot and similar suites requre IFO-parsed content. That means, your VOB set only contains a single Angle of a single Program Chain.

If you don't have your original DVD anymore, then you also need to be aware that this is not considered Fair Use (http://www.doom9.org/disclaimer.htm).

If you want to rebuild a DVD, you could try MuxMan (http://forum.doom9.org/showthread.php?s=&threadid=88493).

But you will have to de-mux the audio and video streams from your VOB files!
