What do you think is the best bitrate to encode a movie like the LOTR trilogy?

that depends on:
-what codec you use
-what quality you want
-what resoltion you encode at
-what media type and number you target at
-what preporcessing you do
-..................

wow thats a lot of factors. for someone like me who is just getting into this AVC thing and just want a quick smart way like nero digital, which setting would be the best for the LOTR trilogy? Would the quality still hold up if i squashed them all onto one 4.7 dvd?

If you mean to back up all 3 movies on a single dvd, my view is that you ask a bit too much. You could try with Nero's AVC Standard setting and HE-AAc at 96-129.
