End user VHS to DVD kits

I have read many threads and done many searches. Im sure its been discussed but I cant find it. I want to convert a bunch of family VHS videos to DVD. I plan to do minimal editing (maybe add a few simple menus to jump to different parts of the video). I want to preserve the quality (which is average)

I am looking at the pinnacle and roxio type hardware for the analog capture.

Can I get some opinions on sub $100 video capture hardware?

I am not concerned about cpu cycles and can use my computer for the MPEG2 conversion and have plenty of disc space (I think)

What is the best encoder for MPEG2?

Easy to use software for 1 click video clean up?

I am aware of the capture/convertion guides but I am looking for much more user friendly gui/ 1 click type stuff
