In AVIMuxGUI's help file, I found a section that says "Also, there seem to be issues with some filters, causing matroska files containing vorbis audio to b0rk sometimes if lacing is used." Does that mean that if I put more than one Ogg track on an MKV I could experience playback problems? If so, what alternatives do I have for MKV + multiple Ogg tracks?

A note to all Windows users: Files created with this new version require a new version of Gabest's Matroska splitter - at least 1.0.2.4 available from http://sourceforge.net/projects/guliverkli Alternatively you can use Haali's new splitter. Read about it on this thread on doom9.org: http://forum.doom9.org/showthread.php?s=&threadid=80762

Ever tried to concatenate two or more MKV's or MKA's to a single file ??
--> Ever tried to make a 24fps rip with 5.1-AC3 from a 25fps source (especially a year ago when BeSweet still couldn't handle WAV > 2GB input) ??? <--
Ever tried to ...

Lacing is a way to save overhead when saving audio tracks in containers, and used by default when Vorbis tracks are stored in MKV. However, alexnoe was allowing to use some extreme, user definable lacing settings in avi-mux GUI, to allow the very minimum of overhead if the user decided this is important.
As long as you go with the default settings for lacing in avi-mux GUI or use mkvmerge/mmg, you wont have any problems with playback of Vorbis in MKV, unless you dont use the old OggDS from Tobias Waldvogel. Just make sure CoreVorbis is installed, and you are fine ....

Vorbis lacing with only 50ms seems to work out and still reduces overhead by a significant amount. With 1000ms per lace, it terribly jerks. Settings like 200ms seem to work often, and sometimes not.
Depending on the version you are using, default setting is either off or 50ms for Vorbis.
Lacing has nothing to do with the number of streams. It is only related to the way each stream is stored in the file.

stephanV: I will, I was just asking what problems to expect so that I could be better prepared to detect them in case they did occur.
ChristianHJW and alexnoe: I'm using v1.16.8 and I always used default settings, so I guess I'll be ok. Thanks for the replies and simple explanations :).
