Have you tried option "-channels 6"? Default is 2 channels.

And you might also need "-ac hwac3" for hardware AC3 passthrough if you have a digital out.

And probably -ao alsa (I don't think OSS does 5.1). You may need to recompile mplayer with alsa support. Make sure your alsamixer settings are correct as well.
