What the guide says doesn't hurt; it should produce the same results. Separating the fields is just an unnecessary step.
Furthermore, most people probably do some spatial filtering too.
I suppose it would be nice if the guide mentioned the unfold/fold method or scharfis_brain's method. It seems like these questions have been coming up a lot recently...

Could ajordan's FixChromaBleeding (http://forum.doom9.org/showthread.php?t=77074&highlight=FixChromaBleeding%28%29) function be included in the guide? It seems like a quick and easy way to automatically correct chroma shifts.

Also, SSIQ (http://yatta.mellbin.org/misc/) should be considered, it's a very good rainbow removal filter.

I guess you mean section 5.2.1.

Hi, actually I want to capture vhs videos, but I dont know that method is more recommended for saving more details in the capture.
Options:
1 Video for components. http://en.wikipedia.org/wiki/YPbPr
2. Scart. http://en.wikipedia.org/wiki/SCART
3. S-Video. http://en.wikipedia.org/wiki/S-Video
¿What is method that saving more details mainly in audio?

There are no VCRs with component output, except for a few "broadcast" decks where the signal from the tape is converted to component by the timebase corrector card inside.
S-Video is best because it most closely matches the format of the video as stored on the tape. Only S-VHS VCRs will have S-Video outputs; they can play back VHS tapes as well.
SCART can carry S-Video signals but I don't know much about it.

Of the cable types you linked, only SCART can carry audio. I doubt there is any difference between connecting audio by RCA or by SCART.

I was looking for theoretical informations about analog video.
I'd like to archive a few VHS tapes with the best quality possible. I've found professionals who do it with a TBC-equipped JVC DVR and with a Canopus ADVC-110 capture device, which is outputing DV signal. I'm wondering if converting a 235 lines VHS to a 480 or 576 lines DV signal makes sense, or if there's a better way. Any suggestion?

this looks like an excellent resource for understanding the fundamental concepts of analog video capture, but much appears to be outdated, particularly with respect to capture hardware and software. I want to believe that in the shiny new land of 2017 the average VHS to PC workflow has been at least partially streamlined simplified as compared to olden times.
