What is the use of "Add PreCommand Subtitle Off" in DVD2DVD-R?
Soemtimes when the Prohibited User Operations are removed, it can also remove the subtitle off command PUO. Usually, the subtitles are off as default until turned on by the remote or a menu.
When I use DVD2One it automatically shows the subtitles on a couple of my players. I have to add the subtitle off command manually using Ifoedit to stop this.

Thanks nwg, that's what I thought,
the problem is that when I check "Add PreCommand Subtitle Off" the subtitles are automatically shown

Hi
The "Add PreCommand Subtitle Off"-function is ignored automatically if "Autostart" is activated for any subtitle.

Now I understand,
and what is the use of "Force Encoding"?

It will encode even if not needed (already less than a dvd-r size).

How, specifically, did you do this? Probably referring to this guide (http://forum.doom9.org/showthread.php?threadid=45440).
