Hi!
Is there a way to rip a DVD including EVERYTHING, even the menu? If so, are SmartRipper or DVD Decryptor able to do it or which program do I need?

try ripping in file mode and select all files !
then use dvd-rb or the Big 3

the menu is usually conatined in the vts_0x_0.vob files...
as buzzqw already said, you can easily rip them in file mode!

SmartRipper lists an endless number of Program Chains in "Title 1" and in each "Angle 1" and "Angle 2" included, which of these do I have to rip? All?! And there is another Title: "Title 2", with 5 Program Chains, each containing "Angle 1".
Is there a way to extract the menu into a seperate file, not a vob file? If so, which file extension do these menus have?

this is ifo mode, you won't be able to extract the menu this way... use dvddecrypter in file mode!!!

If its just single layered, you can use DVD Decrypter in ISO mode to rip the whole thing, or do a full disc backup with DVD Shrink for single or dual layered discs.
