I would like to take out some documentarys from a couple of DVDs and put them on a seperate DVD and then mayby encode this down with DVD-RB. Is there a guide for something like this?

Hi,
not directly. For this kind i would use dvdshrink to get the documentary out of the differnt dvd (you could put cutting points in shrink).
after you have have done this you could use DVD2ONE to merge all titles in one title or use TDA to do another dvd with different titles and chapters.

You could use DVDRemake v1.4.6, it will let you blank out any items you dont want, then you can change the first play item to the extras/documetary menu and you should have the disc you want. I havent done this but I see no reason why it wouldnt work. Good luck and keep us informed on you progress.

If you want to include any type of menu, you are going to have to author a disc. Doom9 has several Guides for that (http://www.doom9.org/mpg/dvdauthoring.htm).
If you don't need a menu, just use DVD Shrink like penny says. You can reauthor a disc from several sources with that, just set each element to 'no compression' and then run your output thru DVD-RB.
EDIT: to clarify, I meant if you want a menu to include items from several discs.

Use DvdReMake "replace block" feature and insert piecess from other disks.
