Can I create a Divx -AVI file with multiple selectable audio tracks (ex. ita-eng)? Something like a DVD...

It's possible but you would be better off using OGM or MKV containers. See the "New A/V Formats - Containers" for more info.

You might find Alex Noe's AVI-mux (http://www-user.tu-chemnitz.de/~noe/Video-Zeug/AVIMux%20GUI/index-eng.html), the tool for you!

they can hold far more types of streams than avi, they have no problems with VBR audio whatsoever and can also hold subtitle streams. unfortunately, they are still not as well known as avi.

The main advantage of keeping things AVI comes if you decide to spin your encodes in an stand-alone player!

What about menu?
Can I create an initial menu for my multi-audio-Avi for audio-selection?
you can create a menu with the .mp4 container
but beaware its not difficult to create atm as no authoring tool exists, so you have to code this by hand
and you need a player which understands these menus of course
