This is probably the wrong thread, so please correct me if it is, but...
I'm wanting to rip a dvd as mpg files so that I can edit them into small segments of video and reburn those segments as a new dvd with new menus and such.
Maybe I'm going about this in the wrong fashion, but that's the only way that I have in my mind to do it.

Try Dvdshrink to get your segments (start end) and then try Dvdlab or Tmpgenc dvd author (any auth app). Lab will allow you to use your vobs as is, no need to demux.

There are many ways to do this, but the above is probably the easiest way if your new.

I'll give dvdshrink a try. I've used it for duplication, but didn't know you could segment.

I found a program called VideoReDo. I simply rip the dvd as a single vob and then VideoReDo will transcode it to mpg rather quickly (like 5 minutes). Also, you can directly segment the vobs from the dvd (or at least the no copy protection one that I'm using) and then just save as.
I tried shrink and I couldn't get any audio to come out of the start/end part. I need to edit by audio, not video. VideoReDo does audio too, although it's stuttery as crap on my pc. I don't know if a faster one would fix it or not.

BTW...
I found out that the stuttering issue was that it was in GOP editing mode. I switched to frame accurate editing and it runs very smoothly on my athlon 1600+.
