well if you take a closer look at this thread here, you'll find a good starting point (hint: look at the post by doug_s):

the following guide (also linked to in the post i mentioned) is a bit outdated but updates are hopefully under way

The biggest problem with DVD9 -> DVD+/-R is the lack of authoring tools.
If your not opposed to using wine for some apps, search the linux forum here with keywords wine scenarist

I've had pretty good success with DVDShrink under wine. My process:
1) dvdbackup -M -i /dev/dvdreader -o /tmp/outdir/
2) dvdshrink (3.15 via wine) and open the outdir
3) mkisofs -dvd-video -v -o /tmp/imagename.iso /tmp/dvdshrinkoutdir/
4) growisofs -dvd-compat -Z /dev/dvdwriter=/tmp/imagename.iso
I found that (writing to dvd+r), I have to set dvdshrink to use 4400MB as max instead of it's default (4464 i think), otherwise I get burn errors when creating the dvd. In DVDShrink, I use "backup" (not re-author), deep analysis, use the "custom" setting on everything except the main feature and set them to lowest possible, drop non-English languages/subs, and let DVDShrink determine the ratio for the main feature to fill the disk. Quality has been very good with the 10 or so movies I've done so far (on a 32" tv, anyway) and all the menus/special features (even the easter egg on LOTRTTEE) work with the discs I've burnt (burned?).
Total process usually takes about an hour (I've never actually timed it) on a P4 1.8G running gentoo.

If you're comfortable with command line tools (and if you aren't - what are you doing with Linux?!?:) ) it's pretty simple with trascode/tcrequant (or other transcoder), dvdauthor and growisofs. dvdauthor has developed a lot lately.

It's a Windows thread about Mencoder, but you may find it useful for Linux as well:

Did you try the output on some dvd players ?
Especially pioneer ones ?

Others may have, I'm still testing on PC with other guys checking on standalones.
That's because I'm still new to MPEG-2 and I'm learning how to encode first, and then how to author. Besides I haven't buyed a DVD recorder yet :D
You'll have to take a look at the threads in KVCD.net for that sort of feedback, but feedback so far seems fine :)

Maybe it's just a stupid question, but do you recreate the structure AUDIO_TS/VIDEO_TS when you authored the dvd with dvdshrink?
i ask that because i tried to burn a dvd and i can't read it.
The authored image work because i tried it with mplayer.
With dvdshrink, i have all the vobs and ifo, but when i tried to do an image like zhak said, it doesn't work :(

ok, my bad, there was no VIDEO_TS.IFO :)
anyway, now, i found a complete native linux way to auhtor my dvd, so now, no more need of dvdshrink :)
