Digital Signal Processing is the general topic that would cover that.

Analog-to-Digital Conversion to be more specific. Here (http://www.dspguide.com/ch3.htm) is a free and readable book on the general topic.

Also, Poynton, John Watkinson, & Keith Jack are authors of books convering video specifically.
