I am sorry I'm a moron. Put me out of my misery.
Of course I can put other data files on the DVD, outside the folders VIDEO_TS and AUDIO_TS, but will a standalone DVD player still read the movie?
I am not interested in audio tracks, only data.
Well, thanks!

Evidently, standalone will play such disks. There is plenty of commercial DVDs that contain data such as software DVD player. On the back of the jacket of these disks it usually says DVD-ROM Enhanced or something like this, and they often carry Interactual logo.

How would you add extra files to the backup copy of an existing disk?
Is it possible with any tools?

Rip the DVD as files to your hard drive. To make things easier, rip the files to a directory like C:\backup\VIDEO_TS. Run Get VTS Sectors in IFOEdit or IFOUpdate just to be safe.
If there are other files or directories on the DVD (and you want them on the backup), simply copy those to C:\backup using Windows Explorer (they're not encrypted, so no need to rip them).
Add your additional files under C:\backup, but make sure not to put anything under VIDEO_TS or AUDIO_TS.
Now use your favorite burning software to burn the C:\backup directory to disk. My preference is to use Image Tools Classic to make an ISO image, then use DVDDecrypter to burn the image.
