Howcome some dvds are interlaced? Isn`t interlacing the result of 25/30 fps progressive frames @ 50/60 Hz(e.g TV)? Why make field frames when the TV will make them for you? What am i missing?

Start with this Video Basics (http://www.doom9.org/video-basics.htm) guide from Doom9's main website. Then see this tutorial (www.doom9.org/ivtc-tut.htm) on how DVDs may be processed from film sources, from video sources, or from hybrids, and how that may impact conversion to non-DVD digital video formats.
