I'm wondering what the best (or some of the best) "no brainer" apps are. By no brainer, I mean NOT programs like DVD2SVCD. I'm talking just pop the DVD in, rip it, set a couple options like subtitles on/off, audio track, and hit "GO." I'll have a DVD+/-RW drive in a few days, so I'll be able to actually write in DVD format and hopefully fit special features and menus on there too.
CloneDVD seems like a pretty cool app. Any suggestions for others?

I don't recall D2S ever being referred to as a "no-brainer", but what you seek might be found in the One Click forums. The forum rules specifically discourage us from asking for the "best" magic bullet....ten people, ten opinions.

Really depends - if you are looking for the best quality in 1-click-solutions, go for InstantCopy. If you want it fast, use a different one (sorry, I haven't bothered looking). If you want something free, use dvdshrink etc ...

First you have to know if you are backing up a DVD-5 (single layer) or a dvd-9 (dual layer).
Here is what I use:
For a DVD-5: DVD Dcrypter
put in orig dvd
press dvd to hardrive button to extract info from disc
wait
Put in DVD-R
find file
press hardrive to DVD-R button to burn
wait
DONE
For DVD-9: DVDshrink 3.0
put in orig disk
press open disc
use auto compression
unclick items like audio and subtitles you dont want (if needed)
press back up
use Deep Analysis
wait
use a burrning program to burn created files (I use nero to burn)
DVD Xpress is easy but not free, plus it puts a notice at the begining of you DVD-R that says it is a backed up DVD.
