How can I extract just the audio from an AVI file?

Yes. You can do it with Virtualdub (free). Just open the AVI and select "Save to .WAV" from the menu.

The VirtualDub method won't work if your source is a DV type-1 file. In that case use your favourite DV editing program to extract a WAV file.
