I'm more interested in is there any standard subtitle format that we know will be supported in Mpeg 4 devices in the future? :\

Yes, with authoring tools that can handle the Systems part of MPEG-4 (see the Sticky threads here or the Wiki of Audiocoding.com). At the moment two different tools are available for free (mp4tool from the ENST and the IBM Toolkit for MPEG-4) and at least one that has to paid from Envivio (the guys that provide the free DS filter/plugin for MPEG-4 content in WMP etc.). I don't know what QuickTime 6.x Pro could do in that respect, but theoretically they should be able to use this, too. And there's Sorenson of course who also provide a full-featured MPEG-4 authoring suite, but it costs a lot of money...

Any tips how to do that in Quicktime?

No, since I don't have QuickTime 6.x Pro (it costs $29.99 by the way), but it is also designed as a multimedia editor, not only as a audio/video player, as far as I know. Probably most of the features do only work with *.mov files though... But there are two Apple forums for the Mac and the Windows version of it, so you might find some better answers there. The link to these and other forums can be found on the first Wiki page.

Sirber,
Thanks for reminding me!
I meant to ask some questions myself with regard to the .Mp4 container. Especially as there have been so many advances in the codec world recently.
Like most people on the forum I've only been able to experience an Mpeg4 video stream when it's within an .avi container - which has it's limitations.
I've experimented at work with QuickTime Pro and created a few .Mp4 clips for clients websites. But ofcource all the clips are 1pass CBR.
So, I guess what I would like to know is. What are you able to put into an .Mp4 container. And will there be some encoding tools coming our way any time soon?
