What is the best program for main movie only backup of 1 DVD-9 to 1 DVD+-R?

Could someone tell me what is the best program for main movie only backup of 1 DVD-9 to 1 DVD+-R with 1 or 2 audio streams and 1 or 2 subtitles ? I would like to know, what program to use to get the best possible audio and video quality if the movie will not be able to fit to 1 DVD+-R (after cutting of all parts that I don't want) and will need to be compressed.
