Know this: Burnable DVDs do not have the capacity of manufactured, dual-layer discs. So you may have to try different types of solutions to meet your needs.

After reviewing the DVD Basics (http://www.doom9.org/dvd-basics.htm) section, try Doom9's guides for DVD Shrink (http://www.doom9.org/mpg/dvdshrink-main.htm) and DVD2One (http://www.doom9.org/mpg/dvd2one.htm), both of which are "one click" backup solutions.

At that point, you can probably start with the sticky threads in the One click DVD backup solutions forum (http://forum.doom9.org/forumdisplay.php?s=&forumid=65).
