Hi ZIZZI,
if I understand you right you want to replace JAP (Japanese?) audio streams with ITA (Italy??). If it is DVD-5 you can probably do this by Ifoedit (I don´t use it very often). If it is DVD-9 you have to reencode and reauthor it. There is a lot of ways and many programs to do it. The right way depends on DVD structure (you can have your episodes in separate Titlesets or you can have more Program chains in one Titleset or you can have combination of both) and tools (encoders and authoring tools) you will use.
So it will be easier to write back tools you want to use and then anyone can help you with it. ;)

So you have all your episodes in one big file (vob)??? I guess it is not very often. You can join your small audio files into big one (for example with BeSweet) - this is not a problem.
Can you use DVD Decrypter to find out what DVD structure you have. I guess there will be some separation of each episode at least in separate PGCs.
