Assuming you've made some edits to an IFO file, what's the proper order for saving the file? Is it:

1. Make edits
2. Click on "Save"
3. Click on "Get VTS Sectors"
4. Quit IFOEdit

It seems that IFOEdit automatically overwrites the old IFOs if they need to be corrected (so, no need to save afterwards). Can anyone confirm?

You are right - 'Get VTS Sectors' updates the old IFO's (if they had to be corrected)

BUT: It is advised to do this operation separately. That means:
Make your edits, save whatever is necessary, CLOSE IFOEdit.
THEN open one of the IFO-Files (VIDEO_TS.IFO e.g.), perform 'Get VTS Sectors' and you are on the safe side.

This should be the last operation before you start burning.

@vikodin

If you want more information on this, here's Derrow's guide from IFOedit.com.
