AVI is a container format for video and audio. My guess is that you have not selected a video codec (http://www.doom9.org/glossary.htm#Codec) in your tool. AVI supports many types of video and audio codecs.
Without a codec, you'll be creating uncompressed video. You do the math: width x height x frame rate x 24 bits for color x length in seconds = # bits, not including any overhead. Divide by 8 to get number of bytes.
MPEG-4 codecs are very popular for AVI these days; see Doom9's comparison (http://www.doom9.org/codec3-1.htm) of some of the more popular ones.
I can't recommend any particular encoding toolset, since I have no knowledge of RM sources.

Though in this particular case it's likely you have uncompressed audio, not uncompressed video (that would be way more than 1.75 GB)
