From an Audio CD? You could use heaps of programs, personally I use Nero for my backups to be left in my car.

But for DVDs, you can use any DVD Ripper that has Stream Processing. My favourite here is 'DVD Decrypter'.

If you're ripping audio from a DVD, both DVDDecrypter & Smart Ripper can handle it with stream processing. But after doing this last night (on a 4 minute music video), it seems like ripping the complete vid, then demuxing the audio with DVD2AVI was much quicker than stream processing out the audio on it's own. Not quite sure why this happens. The downside is that since you're ripping the video+audio, you'll need a lot more free diskspace.
