I'm new at this myself.I managed to fit LOTR in a DVD5 with amazing quality and with minimum effort on my behalf but maximum effort from my PC
1)Rip it
2)Take out everything with any IfoEdit version
3)Encode it using TMPGenc.Forget the template and stuff.Follow the guide given in this site,it is quite good,but don't pay much attention to the template section.It took me 18 hours on Athlon 1.8 with highest quality.Believe me it worths it.
4)Simply author a new dvd using ifoedit and the guide proposed in this site.It takes around 20 minutes to do so.
5)I ended up with a perfectly!!!!! looking dvd5 with one audio and one subtitle stream.
6)A problem is that fast forward is working great but jumping to another chapter doesn't.
Please give it a try and let me know.
