nope, Matt Damon was still appearing no matter how much I stripped out!

seriously tho, what region is it? and is it just that scene and how long for?

was the disc totally scratch free when you ripped it?

I've done a backup of Bourne Identity Region 1 with dvd2one, movie only, AC3 6ch sound, no problems. In my experience jumping and freezing is usually media related, check the writable disc for scratches or blemishes. Some of my cheap datawrites seem to suffer from some delamination which produces problems but is easy to see if you hold them so the light angles across the surface.

Yep
Had the same issues with Enemy at the gates
2 dvd+rs later
it clicked
lets try a different brand
wallah, no more jerking.

In the film that is.

I done the region 2 version of Bourne Identity using CCE. I got a perfect copy.

I kept both the 5.1 and the DTS sound, subtitles and menus. It is fairly straightforward as it is only a single PGC.

Haven't tried it with IC so I can't comment on that.

I did region 1 with AC3 5.1 movie only. It came out perfectly.
