I just made a copy of Jurrasic Park 3 and ended up with French audio when I ticked English only. Is there some way to check before burning?

Are you writing to disk or directly to the DVD from IC? I'd suggest writing to your hard disk before the burn to ensure things are working correctly. Of course, this means you'll need software to burn the disc once the output is verified.

If you're writing to your hard disk, you can download pdixtract or pdigui to extract DVD files (i.e., VOBs, IFOs and BUPs) from the pdi files that IC will create on your hard disk. (Both pdixtract and pdigui are freeware and available on this forum.) pdi files are the proprietary output of IC. If you create a VIDEO_TS folder and move all the files that are extracted there, clicking on the VIDEO_TS.IFO in the folder should launch your PC's default DVD player. You can determine whether the langauge is correct and whether the menus are working properly at this point.

There's one other route: You can use pdi2iso to create an iso file from the pdi files. You can then mount the iso in Daemon tools (also freeware). Daemon tools will act as a virtual disk drive and play the DVD. You can extract the files from the virtual drive and burn them to disc, or you can burn the iso file directly using something like Nero, or you can use isobuster to extract the DVD files from the iso and then burn them to disc.

Let me guess you put a check mark next to English here?

Good point, too. The checking/unchecking protocol is bass ackwards compared to what most other software packages use.

That's right mrbass, I made sure only english was checked and nothing checked in the subtitle pane. Maybe has something to do with there being a DTS track present. I have no idea. DVDDecryptor was used in file mode and I selected all files. Did this with Godzilla too but it kept crashing during the transcoding at the same point so I didn't get far enough to test the audio.

check means to remove audio so you are removing english

so this isn't a bug but user error. I agree it's tricky unless you read what it says:
(look at screenshot)
Remove the following languages if present on the disc:
