I know I saw it somewhere before but why is a movie less than 2 hours long ripped more than 5+ GB?

It's not only the duration of the movie that matters, it is the average bitrate as also.
So, if you have a movie that is less than 2 hours long, say 100 minutes, and the average bitrate is 5000 Kbps, then, you have a resulting 5 GB. The average bitrate can go as high as 9800 Kbps, so you do that math, even a movie of only 1 hour could be in size por than 5 GB.
