recently I have been using voberator to demux the menu vob into its individual bits so I can use the parts to make menus in maestro.

You can get the masks by using subrip on the menu vob

My question is this quite often on still menus say the chapters will be held in one demuxed m3v file of say 3-5 frames. Is there an easy way of getting individual pictures out of this .m2v file to use in your menus

The method I am using at the moment that works quite well but is messy is to crank up powerdvd and in open media files, mode load the m2v file with the still frames in 10 to 15 times and as it plays press "C" over and over again to get the pictures in bitmap form. This obviously gives you lots of pictures that you have to sieve through to get the ones you want. Also powerdvd will lighten are darken the pictures depending on the settings

I think I am going round the houses on this one

The easy way is to drop the .m2v into DVD2AVI, put it in RGB mode, and hit B to save as a bitmap.
