I want to copy the normal ac3 track from audio dvd's that is designed to play on standard dvd players. I have been unable to rip the vob's. If I go the route of inputting the 6 channels in analog what type of sound card set-up do I need to handle the 6 seperate channels and convert then to wav files?

The easiest and cheapest way is just to use the line in or microphone in on your existing sound card. Use some audio software to record from which ever line you record from and save it as a wave file. You will have to sit back and record each individual channel one at a time this way but you will get what you want. It's an analog not digital transfer but it does work. Get a quality cable so interference won't develop in the record.

As far as hardware for this...I'm sure it exist. But I can't think of any off the top of my head.
Maybe someone else can elaborate on the hardware.

I would have no trouble recording the 6 wav files, but how do I sync them to encoede in
AC3 or DTS?

Well I went digging on Google and come up with a hardware solution that you may want to look into if you have a fat wallet. "Audio Disk Recorder" is the keyword to search around with on the internet. Here are some links I found:

This seems like over kill to me and not the best way.

I used to rip DivX, SVCD often so I had some idea about extraction etc. If you simply want to get the audio in ac3 format from the DVD-A, do what I did.

I was just trying a few things, and it worked fine for me.

Use "Smartripper" and in the moivepart select stream proccessing. Untick the video, subtitles etc and just leave the "Audio, 5.1" stream selected. Then press go, this will make you a vob file with just the orginal 5.1 audio stream and no video stream (~200mb)

If you want to get this .vob file to a pure ac3 file now run a vob splitting programe such as "VobEdit" or similar. Open the vob then click "Demux" and select "AC3 audio stream". This will create a .ac3 file.

This will have all the tracks on one big file, I guess you could spend time and split into to individual tracks if you wish.
This way is 100% digital so nothing is lost, you could also run a prog like AC3Machine to chnage the bit rates etc.

Maybe this is not what you wanted? but it's a solution :)
